Hachicken Ramen (Emsphere)

Hachicken Ramen serves chicken-broth ramen at Emsphere in Bangkok. Yuzushio and Paitan Special come with scallions and red onion on the side; Yuzushio has a clear broth and Paitan a thick white one. The brand comes from a chicken restaurant that started in 1970 in Marutamachi, Kyoto. At lunch the food arrives quickly and tea is refilled several times, and the Paitan broth has a pronounced sweetness like milk.
