Gyutan no Shoya is a local restaurant and bar in the basement level of Sapporo that serves beef tongue dishes alongside drinks. The beef tongue set meal comes with a plate of beef tongue, rice, and a light soup containing oxtail. The portion of rice is large enough that diners leave some behind, and the meat in the oxtail soup is tender. The beef tongue becomes tough and dry as it cools, so it should be eaten right away while warm.
